    CORN CASSEROLE

    RECIPE PROVIDED BY CAROYLN COATS

  • 1 stick margarine
  • 1 small onion chopped
  • 1 green pepper chopped
  • 2 eggs beaten
  • 1 can regular corn with juice
  • 1 can creamed corn
  • 1 small jar chopped pimentos
  • ˝ pint sour cream
  • 1 pkg. Jiffy corn muffin mix (8 ˝ oz)
  • 1 cup shredded Monterey Jack Cheese

    Sauté onion and green pepper in margarine. Mix corns, eggs, pimento and muffin mix in large bowl. Spoon mixture into a greased 9x13 pan. Pour onion and green pepper mixture on top. Spoon sour cream on top and sprinkle with shredded cheese. Bake at 400 degrees for 30 minutes. Serves 8-10. Enjoy!
